The Kitchen

Paul Meesawat
Chef and Owner

Chef Paul was born and raised in Thailand. After graduating with a degree in architecture, he decided to move to the United States in the year 2000 and Las Vegas was his first destination. After a few years of working in a small Thai and Chinese kitchen, Paul decided to enroll at Le Cordon Bleu, the college of culinary arts. He graduated in 2005 while working for a fine-dining French restaurant “Fleur de Lys” for many years and reached the title of Executive Chef within a very short 5 years. During this time, he became a part of an opening team of many restaurants. He helped with a cookbook and TV Show for his mentor Chef Hubert Keller. After joining the team of Caesar Palace, one of the biggest Hotel Resorts and Casino operations in the world, he was in charge of In-Room Dining of 4000+ rooms, employee dining room serving over 5000 employees per day, and 16 villas that were only available for high rollers and celebrities. After 8 years of large operation management, he decided to start ”What’s Zaap? Thai Food”. This is just the beginning.
